Is there a way for me to see my credit across every project on SU? Do they keep track of that?

what I found most precise (by project) is here : https://scienceunited.org/su_user_projects.php
In your account, under "Contribution", click the "See" button in "Science projects" (I use french as interface language, I hope my translation is not too bad).
You won't find gflops but CPU/GPU hours and number of tasks done/failed.
